I’ve gone back and forth on keeping energy/snack bars in the house and haven’t had any in a while. In preparation for last month’s ‘MTNA conference, though, I grabbed some and found a couple of new favorites!

Recently, a lady in our church had a baby, and a friend used Take Them a Meal to organize meals for several weeks. What a great way to manage this type of thing!

The meal I made for the above-mentioned family was a delicious casserole from America’s Test Kitchen: Skillet Chicken, Zucchini, and Cheesy Rice.

I’m not usually a casserole person, but this one will be making regular rotation. I love that the zucchini is shredded, so it almost melts into the casserole. There’s just enough cheese to make it tasty without feeling heavy or overly cheesy. The broiled parmesan on top gives it a nice crunch. Be sure to shred your chicken well—it makes for a nicer texture.

P.S. Unfortunately, the recipe is from a subscription site, but I did find a copycat version online.
